italian salad...no lettuce...

this is a very loose recipe, which allows you to adjust for servings and personal taste...

marinade...dressing...

red wine vinegar
mustard...hot, sweet or whole-grain...
olive oil...
salt...
pepper...
pinch of sugar...
stir...

mushroom caps...
artichoke hearts...plain or marinaded...
brussel sprouts...optional...
place above items in marinade while preparing the rest of the salad...

in bowl...
grape or cherry tomatoes...
hearts of palm, manageable pieces...
black olives...
green olives...
cubes of mozzarella cheese...
pepperoncini peppers ...

pour marinade and veggies over items and gently toss...

chill for at least one hour...

this is a hearty side-dish, works well on a buffet, and is all around delicious...

add or subtract as you like...
pickled italian veggies...
roasted bell peppers...
anchovies...
capers...
eat...
